The Perfect Marzipan Pancakes

Marzipan is a truly dividing topic in the baking scene. Some people even hate the sound of it, others start drooling the moment they smell this lovely almond-based deliciousness. For those people this recipe will be THE thing to bake for a cozy afternoon or simply for breakfast. So keep on reading for the perfect marzipan pancakes.

What you’ll need…

Serving size for two people (or to be honest one person is probably more realistic)

  • 10 tbsp. of hot water
  • 1/2 Cup of marzipan (120g)
  • 2 free range eggs
  • 3 tbsp. refined sugar (25g)
  • 1 1/4 Cups of flour (180g)
  • 3.4 fluid oz. milk (dairy or non dairy) (100ml)
  • 1/4 tsp. baking powder
  • 1 tsp. cooking oil
  • splash of vanilla extract
  • pinch of salt

Preparation

To start our pancake batter we’ll mix together the hot water and finely chopped marzipan. Whisk together until it forms a smooth and shiny, cream like consistency – set aside.

Now we’ll get started with our main batter. In a large mixing bowl mix together the two eggs until fluffy and the yolk and whites have formed an even mixture. Add the sugar, a splash of vanilla extract and salt. Whisk it all together once again until the sugar has fully dissolved. Now mix in the milk (or milk substitute), the flour and baking powder. Mix until it forms a thick but even batter.

To finish the preparation, fold in the marzipan mixture we made earlier and set aside.

Baking

Now for the fun part, put the cooking oil in a medium sized pan and preheat to medium/high heat. Once the oil is hot add in about 1/4 cup of batter at a time and let each site sizzle until golden brown. Repeat until all the batter is used up. And there you have it a lovely stack of fluffy, golden brown marzipan pancakes.

As a finishing touch you can add jam of some sort (black cherry fits the best in my opinion). Enjoy!
